Leah has 2 children, Gabriel 14 & Caleb 18. When Gabriel was 2.5 years old he was non-verbal, tired all the time, and was not playing with toys. After seeing several specialists, he was diagnosed with life-threatening food allergies to dairy, eggs, and gluten. 72 hours after removing these from his diet, a light switch turned on in Gabriel, and he was bright-eyed, talking, and playing for the first time. This was a turning point where Leah saw how important food truly was for the body. She thought it would be quite easy now that she knew the root of the problem, but she had no idea just how hard it would be to keep Gabe safe as well as keep him included in life events that are celebrated with food. Eleven years ago it was impossible to find desserts that were free from all of Gabe's allergies, so Leah got in the kitchen and started creating treats!
Her Household went dairy, egg, and gluten-free in order to eliminate cross contamination. They use substitutes for cows milk like Ripple, duck eggs and egg replacer to replace chicken eggs, and cassava flour or rice flour in place of wheat flour. They mainly eat at home and buy the groceries from Enjoy Life Foods, Better Bites Bakery, Daiya, Nadamoo Ice Cream, Siete Foods, and 54 Cocina.
